Yesterday I had the pleasure to help my son Kindergarten class to make these healthy Pumpkin muffin,the kids had so much fun.
I fall in love with the recipe because it is was so simple and healthy so when I come home I had to made them right away.
It was a perfect healthy after school snack,try it and let me know what do you think.
I highly suggest to make them with your kids they will have fun.
1 small can pumpkin (15oz)
1/2 cup applesauce
1 teaspoon vanilla
1/2 cup brown sugar
2 cup of flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 1/2 teaspoon pumpkin spice or you favorite spice (I used cinnamon)
1/2 teaspoon salt
A sprinkle of love
Pre-heat the oven at 350.
Grease the bottom of muffin cups.
Combine all the ingredients starting with the pumpking and the apple sauce, mix a little bit add the eggs the vanilla and the brown sugar and mix again.Now add all the dry ingredients and you are simply done..
Pour the batter into muffin cups and bake for about 25 minutes until they are puffed and a nice color golden brown.
