Lasagna Rolls

I love to try new recipes, especially if they involve Fresh Pasta! It was great to be home with the kids around Christmas time, what a blessing! The week after Christmas I wanted to try a new recipe that I saw on of the most popular Italian Blog Giallo Zafferano! Lasagna rolls basically lasagna sheets stuffed with Bescamel Sauce, ham and Emmental Cheese! The result was outstanding, the dish is very festive and filling! I made Fresh Homemade Pasta or you can buy the pre-made lasagna sheets and boil it before using it!

Here the recipe


Ingredients for 20 rolls:

⁃ 2 eggs

⁃ 200 grams of flour

Or you can use the pre-made fresh pasta that you buy at the store.

To make the fresh pasta:

Put the flour in your board and do like a Vulcano! In the middle of your Vulcano put the eggs and beat them with a fork and slowly incorporate the flour!

Knead the dough for 10/15 minutes until is nice and smooth!

Let it rest in the fridge for 20 minutes covered!

Now its time to make the Bescamel sauce:

⁃ 50 grams butter

⁃ 50 grams flour

⁃ 500 ml milk

⁃ Nutmeg if you like

⁃ Salt

⁃ A sprinkle of love

In a pan put the butter, turn the heat on low medium and let it melt! When is melted add the flour all at once and stir ( you need a whisker)

Add the milk and keep stirring without stop!

It will take 5/ 10 minutes

Add nutmeg like teaspoon, salt!

The bescamel is ready when is nice and thick! The secret is the keep stirring!

When its ready, let it cool down and put some cling wrap on top your Bescamel ( basically the cling wrap touch the bescamel) this operation is very important otherwise the bescamel will loose the creaminess!

Now its time to make the stuffing:

You can seriously use whatever you like!

In this case I used Italian ham and emmental cheese! You can add mushrooms if you like( I could not because my son don’t like them)!

Bring your pasta from the fridge and roll it out with a rolling pin! You need to have a rectangular shape more or less 50×30 cm

When you have this put the pasta on parchment paper!

Spread 2/3 spoons of Bescamel sauce, add the ham, the mushroom if you like them(they must be cooked), Parmiggiano cheese, sprinkle of salt, and the cheese!

Now it time to roll your roll, with the help if parchment paper! Roll it and freeze it for 20 minutes.

Now in a baking pan put 3/4 spoons of the Bescamel ( if its too tick put it in the stove on medium heat and add 1/4 cup of milk warm and stir for few minutes until is nice and smooth)

Get the roll from the freezer and cut more or less, 20 pieces and put them in the pan! Put more Bescamel on top, More Parmiggiano cheese, and bake for 30/40 minutes at 350!
