Pasta al Burro/ Pasta with Butter

Pasta al Burro or Pasta in Bianco/pasta with butter is a really simple dish that everyone adore in my family.
I literally grew up with this dish, my mom used to call it salva cena/ dinner saving, just because is made in 12/13 minutes depending on how many minutes you like your pasta cooked. I made it today after our cold soccer game, plus my daughter was sick and this is a perfect comfort food.

To prepare it You just need 3 good quality ingredients:

  • Pasta: I prefer short pasta like Penne, conchiglie🐚 , lumache🐌, pipe rigate. Sometimes I use tortiglioni or Rigatoni but those one are kind too big for our personal taste
  • Butter I use unsalted butter
  • Parmigiano Reggiano is a must. Always use the real Parmigiano Reggiano, freshly grated. If you use the powered stuff the result won’t be good.
    I guarantee that if you make it you will be happy about the result. Try, just boil the water, SALT your pasta water, put the pasta in the water.
    After 12-13 minutes drain all the water, put the pasta back in the pot, time to add the butter and time to stir with a wooden spoon. I like to do this on my stove that is off ( the wArm stove will help the butter to melt evenly and combine with the pasta in a magic way without drying the butter too much)
    Add the Parmigiano, you are thinking how much Parmigiano? Has much as you like
    I never measure, I go by feeling. Today I think I grated 1/4 cup more or less. Mix everything, this process has to be fast. White pasta is not good when is cold. Plate the pasta in a dish. I usually put the dishes close to the stove so they are a little bit warm, perfect when you do a butter sauce.
