About bellacibo72

Im Marzia, a Real Authentic Italian mom that lives in Vancouver. I moved from Italy to Vancouver 14 years ago to follow the real love of my life. It was difficult in the beginning, but I survived. Vancouver is a wonderful city, full of opportunity but unfortunately there is not food culture. Fast Food and pre-made food are staples in most of the family and that is SAD. Few Years ago I said yes to a group of Canadian friends that wanted to learn how to make a real Authentic lasagna from an AUTHENTIC ITALIAN MAMMA. I had so much fun teaching them what my mom, nonna and my aunt taught me in all the years that I lived in Italy. That Night I figure out how GREAT and AMAZING is Italian Culture. That night I got really inspired and I decided that maybe, in my small world, I could help some people to get inspired to cook real, healthy food. It has been great so far, so many people came to my classes and so many people now are making the food that I did teach them, the food that my mom, nonna and my aunt taught me. This is what truly FILL MY HEART. Thank you for reading and come to my kitchen to get inspired.

Bella Cibo’s Story

Hello friends, welcome to my website, I just want to give you a personal info about me and why Im passionate about cooking and Italian Culture and Italian Cuisine.
Ciao I’ m Mamma Marzia, an authentic Italian Mamma! I was born in Naples but I grew up in North Italy in a beautiful Valley called Valtellina!
I’m happily married with the love of my life and I have 2 children and we live in Langley.
I moved here 15 years ago to follow the love of my life.
Growing up in Italy gave me the opportunity to learn about Italian Cuisine, Italian Tradition and Italian Culture! I’m a truly believer that in the kitchen you build the best memories! Italian Food Culture and Tradition are simply amazing and my goal is to share them here in Canada with the Canadian Family!

Six years ago I decided to say yes to one of my dear friend that wanted to learn how to make an authentic Italian lasagna! She got few friends together, they came over and we made lasagna from scratch with love and lots of fun! It was one of the best night of my life!
That night I decided to teach and share my authentic Italian cooking knowledge with my friends! After that night I also had to learn few new words: marketing, branding and Social Media!
I was a stay at home mom with 2 small children and I had no idea where to start! It was difficult especially because of the language but I made it!
I created a Facebook Page by myself, Instagram and I started to research on Google “ how to advertise yourself”!
One word got my attention right away #authentic, so I decided to be how really Im and I thought that at the end I had not to loose, people like Authentic right?
My authenticity is the key of my success and makes people comfortable! This for me is very important because if they feel comfortable they don’t feel intimidated so they are able to create the dish for the family = building memories and Tradition!
I have been managing my Social Media and everything else all by myself in the last 6 years ( kind of tired).

I now teach Italian Cuisine from my little kitchen here in Langley, I Like to believe that I m on a mission to bring a little bit of Italy on the Canadian tables!
The people that come to my class are not just people that come, pay, learn and go! They all become part of my family, they all stay in my heart!
I like to build memories with them, with the food that we cook together, creating an emotion and the imperfections in my kitchen!

My cooking classes are a little bit like a show and they are lots of fun, this is why I think people remember me and this is why, I think, they are able to create the dish that we made together!
The best compliment is when people say “ thank you for the wonderful food and great experience”.
Yes, we need more real experience, we need more connections with real food and with people!
Come to my classes for an Authentic Italian Experience.

In the last few years My cooking classes got few satisfaction:
-March 2018 article on Langley Advance.
-October 2018 I won an award with the Langley Chamber of Commerce.
-Last week the Marco Polo newspaper in Vancouver wrote an article about my classes.
And more to come for 2019!
My dreams are:
-Write a cook book
-Bring some of my friends to Italy for an unforgettable Food tour.
-Inspire more people including the New Generation
-Bigger kitchen
-a nice Cooking Show
-Eat whatever I want without gaining weight.
My favourite food are:
Last thing Im proud of my self and so thankful for the people that gave me the trust and the love!
We need more love.

My story

A little bit of my personal story that I want to share with you! it took me years to be able to share it! This is just the beginning, More to come… …

-When I started my business I had no idea what I was doing.

I was confused and really scared. My number one fear was my dream would fail and people wouldn’t like me. I thought nobody would like my food, my personality and my house. My low self-esteem and lack of belief in myself stemmed from my family. I grew up surrounded by people that did everything possible to make me feel I was never good enough and convinced me that something was wrong with me.

I lived in the shadows of my family in Naples because I was an unwanted child, and for my entire childhood, my grandma and my biological dad made me feel guilty for even being born. I was told I was a shame to their family. Their lack of love and support continues to this day well into my adulthood.

But, the difference with yesterday and today is that I believe in myself and feel strong enough to share my story in the hopes it helps someone else believe in themselves.

The crime I committed was being the child born of an affair between my mother and a married man. My mom was just 16 and my biological father was a grown man married with kids of his own. Back then in Naples, when my grandmother found out, it was a big scandal. When my mom got pregnant, my grandmother forced her to leave the house and hide her pregnancy and then marry a stranger after I was born. What happened was considered an unforgivable crime and my grandma decided to not tell my grandpa and his side of the family that I existed.

The lies and shame continued. My grandma told my grandpa that their daughter was getting married to a widow that already had a daughter: me. My grandpa and his family never found out that I was part of their family. They all thought that my biological mother was dead and my mom was my stepmom. And for a long time I didn’t know the truth either.

For my entire life I was poorly treated. I don’t know how to explain how mean few people of my family in Naples were.I was treated like a second-class citizen and I always felt like a big secret. The only exception was my grandpa. He treated me like gold and I think inside him he knew the truth. He was my lifeline while growing up.

My biological dad was and still is a really mean human being { by the way is from Sant’ Antimo} He is a big liar and the cruelest person you can ever imagine. When he found out that my mom got married and left Naples to go to live up north he decided to look for her and me … unfortunately.

When I was five or six, I had to meet him. I was ok without him, my mom and stepdad had other kids and I was happy. I remember he used to call me every day. I had no idea who he was and the only thing I knew is that I had to talk with him because it was what “he wanted.” He was always polite and really nice and always telling me nice things. One day when I was eight he asked me, “Do you know who I am?” Of course I said no. I actually said, “You are probably one of my uncles from Naples” and with his ego he replied, “I’m your father my love, the real one.”

I was so confused for so many years. My mom eventually explained everything to me and from that moment I had to meet this person every time I was in Naples and every time he wanted to come to see me up north. But we had one rule: nobody was allowed to see us and know about our secret meetings. Our meetings had to remain secret! He had a wife and other children of his own who knew I existed, but to this day, my biological siblings have never accepted me as their blood relative.

At the age of 17 or 18, the monster decided to dump me like a garbage bag. One day, like usual, I called him and he said to me, “Who are you? Who is this? I don’t know any Marzia, you are a liar, do not call me anymore. You mom is a liar and your dad is someone else.”

I don’t want to explain what happened to my personality after this because it will be too long. It took me few sessions of therapy and lots of love from my husband to come out from that mess. Unfortunately the monster is still out there living with his lies. Luckily I grew up in North Italy and my stepdad, my mom and my siblings treated me well! They are my family.

I know I could make my biological dad life difficult, but I decided to keep my dignity and let go. I have a loving and supporting family. I live in a great community. I have wonderful clients and friends. The only thing that I really want is to tell the truth about my story to everyone in the hopes it might help someone else believe in themselves and their dreams.

I feel so incredibly lucky to live in this amazing county. I have been living here for 15 years and if I could go back in time, I would do it again! I lived in Italy for 30 years and was unloved, humiliated, and unwanted.

My husband is the best thing that ever happened to me. He has guided me for all these years in the right way. He has filled my heart with love everyday. He and his family made me feel part of the family right away. My mother in law treated me like gold until the day she died. Sometimes I ask myself why someone so nice, loving and caring had to suffer so much and leave us all behind and then people like the monster are still out there living their lives.

My cooking classes and the love I receive from each of one of you gives me the confidence that I have today. I feel so loved and lucky to open my little kitchen to so many nice people. Each of you will stay in my heart forever. I’m so proud of the Business Excellence award that I won recently from the Greater Langley Chamber of Commerce.

I’m proud of what I’ve accomplished personally and professionally and I hope that my story inspires more people like me that were mentally abused. If there is someone in your life that treats you badly or that doesn’t love you, just walk away. You deserve better and if you believe in yourself you can do great things. You deserve to shine. Everything is possible if you believe in yourself.

The Authentic Italian Table in Vancouver

Last week I had the opportunity to be part of  ” The Authentic Italian table” in Vancouver at the Terminal City Hotel. The Authentic Italian Table is food festival  designed to educate food lovers all around the word about Authentic Italian Food and Products  including DOP, DOC, IGP! The program, which is supported by the Ministery of the Economy Development, will also stop to 8 other city like Miami, Los Angeles, Chicago, Houston,New York and Mexico City. Thank you to the Italian Chamber of Commerce in Canada West, Assocamerato and True Italian Taste to put such a great effort on this amazing project! We all need to educate more people about Real Authentic Italian Poducts, unfortunately there is a lot of scam out there.

The night was amazing with lots of vendors that brought their Authentic Italian Product to show and taste! From Prosciutto di Norcia, Orecchiette with Anchovy Rucola  Pomodorini and Burrata,  Bresaola DOP, Casera DOP, Piave DOP, Prosciutto di Parma DOP, Tagliatelle with creamy Muschroom, Risotto with DOP Gorgonzola, Taralli,  Panna Cotta, Espresso, Campari, Prosecco, Real Good Extra Virgin Olive oil,  and lots of vino! I can’t even tell you what was my favorite food because each products was outstanding and Authentic, It was like going back to Italy for me. Thank you to all the vendors that always do an outstanding job promoting Authentic Italian Products, Vancouver unfortunately has a lot of fake Italian  products! Sad but together  we can make the difference!

I want to thank you all for the support in the last few years!Thank you for support my classes and inspiring me every time to do more!I wouldn’t be here without your support and encouragement!

A few years ago,  when I began this new cooking adventure, I had no idea what I would have been able to achieve!

Lots of god things happened like The Master Chef Canada Audition, Nomination for Entrepreneur of the Year with the Langley Chamber and lately a nice , good article on the local newspaper LANGLEY ADVANCE  and most important I got the opportunity, somehow, to know you! And maybe I was able to inspire you to cook real, good food for your family!

My project from now on is to inspire more people to cook! I would love to have a bigger kitchen but I think people like my house because is cozy and there is so much Italy!

I will try to post more classes for the next few months and I want to share a weekly recipe with you! I also would love to do more cooking video but that take a lot of time and money, maybe one day! It will be fun!

Thank you again for the support and if you have any suggestion and tips  just message me I would love to hear it!

Also thank you to all the people that did  send me picture of their homemade food that they learned with me, those pictures fill up my heart all the time! Below the article from the Langley Advance

My story

Hi, Im Marzia and this is me in one of my favorite diva pose in Naples!

Today I want to share a little bit of my personal story, I could write a successful book and it can be used for a soap opera!

I was born in Naples and, luckily enough, I grew up in a beautiful Valley Called Valtellina!

Both my biological parents are from Sant’Antimo, Naples!

They met 47 years ago, followed in love and here Im!

Unfortunately he was married with just 2 children at that time. My mom got married with this person that I can call DAD, a real human being that treat me like her daughter! His mom, my Nonna was amazing!

Unfortunately when I was 9 years old my biological dad decided to appear in my life until I wad 20 when he decided to dump me!

I could tell you a lot of things about this situation, lots of secrets, lots of lies, REJECTION, lots of hiding ….maybe one day! The only thing that I m thankful every day is that I don’t have to live close to that person that tried to put me down so many time with his REJECTIONS! Who doesn’t love you doesn’t deserve you I guess!

I m so lucky to live in this amazing Country where I have an amazing family, good friends, successful business and an amazing husband that did support me and helped me to build up my confidence that I did not have at all! I was broken inside when we met.

Recently I had to contact that man, and more than before, I m glad Im not living there, under his power and his money! Im free and I had the courage to tell him few things but the best was “ I know you tried hard to destroy me and put me down but Im want you let you know that I m fune, I have 2 kids and a wonderful family and Im a wonderful person that people love….your loss”!

My message for you today is “don’t let anyone put you down” and “who doesn’t love you doesn’t deserve you”

Peace ✌️ and love ❤️

The first cake that I have made in 2018: Apple Cakewith Coconut and chocolate!

The recipe belongs to one of my husband aunt that passed away in 2017 sadly! She was an amazing woman and a superb cook! I wish I will be like her.

The cake is amazing, not too dry and very delicious!

The recipe required 3 eggs but I just had 2 in my fridge this morning so I used half banana mashed( that is one of the things that you can use to substitute eggs in recipe)!

Here the recipe all in grams( if you don’t have a scale and you like to bake you should consider buy one)

  • 150 grams flour
  • 100 grans sugar
  • 3 eggs
  • Half glass milk
  • Baking powder 2 teaspoon
  • 4 tablespoon coconut flour
  • 3 apples
  • 2 tablespoon chocolate grated
  • 80 grams butter
  • A sprinkle of love

Cream 50 grams of butter with half of the sugar.

Add the eggs one at the time and mix, add the milk and mix.

Add the flour mixed with baking powder! Mix and add the coconut and the chocolate grated!

Put the cake batter in a round cake pan covered with parchment paper and add the apple already slice all around! Put now the rest of the butter and sugar on top of the apple!

Bake at 325 for 50 minuets.

Buon Appetito

Homemade Apple Cookies

Apple Cookies are one of my favorite cookies since I was a kid! Every single bite bring me back to my childhood in Italy. Its a buttery soft cookie dough stuffed with cooked Apple and sprinkle with cinnamon!

My mom wasn’t a baker so she used to buy them all the time and I used to finish the box in no time! Back then they were very popular and really good, on my last trip to Italy unfortunately I was disappointed after I bought a box! The flavor changed a lot, way less apples and more sugar! I actually said to myself , after I took a bite, that My homemade Apple cookies are way better than that!

Every year I make them for Christmas, they are now my family favorite! I would love to make them more often but they are so dangerous…..I can’t stop eating them!

The recipe that Im using belong to one of my favorite Italian blog –le ricette di Mysia- ! I tried so many recipes and this is my favourite! Try it and let me know.

P.S. I always double the recipe, they stay few days in a box and good in freezer.

For the cookies dough (make 20)

  • 100 grams butter room temperature
  • 80 grams sugar
  • 1 egg
  • 220 grams flour
  • Half teaspoon of baking powder
  • 1 teaspoon of vanilla
  • A sprinkle of love

For the filling:

  • 2 medium apple
  • 1 tablespoons of honey
  • Half teaspoon cinnamon
  • 20 grams of butter

In a bowl mix the flour, baking powder, vanilla, eggs, sugar and butter cut in pieces!

Mix with your hands until the dough is nice and soft! Cover it with plastic wrap and let it rest for at least 1 hour in the fridge!

Cut the apples in small pieces, in a frying pan put the 20 grams of butter, let it melt and add the apples! Add now the honey and the cinnamon! Cook for 10/15 minutes until the apple are soft! With a fork mash the apple a little bit if you like! I like to find piece of apple when I bite the cookies so I don’t over mashed them. Your house now will smell divine, apple and cinnamon are a great combination.

Let the apples cool down! Get the dough from the fridge and roll it out!

The dough is very sticky so what I usually do is to put a piece of cling wrap and roll! Also on your wood board you can do the same or put lots of flour! When you roll out the dough with a round cookie dough cut your cookies! I use one that is almost 2 inch wide!

When you cut out all the cookies put sone apple filling in the middle of your cookie and put another piece on top, using your finger tip try to close the cookie! Its more easy to do than to explain it!

Put the cookies on a baking sheet covered with parchment paper and baked them at 350 for 15 minutes until they are slightly colored.

When they are still hot sprinkle them with icing sugar and more love.

Buon appetito and Buon Natale

Heart shaped cookies

Nutella hearts cookies are delicious shortbread biscuits covered with Nutella. They are very easy to make and perfect for any occasion, if you don’t like Nutella you can replace it with Marmalade. Generally I like to give these cookies to my children’s teachers for Christmas and I have also added them to the Christmas sweets baking lesson. The recipe is taken from the Giallo Zafferano blog. Follow me on social media and let me know which is your favorite Christmas cake.

  • • 100 grams icing sugar
  • • 200 grams soft butter
  • • 2 yellow eggs
  • • 1 teaspoon vanilla
  • • Icing sugar to sprinkle
  • • Heart shape cookies cutter one big and one smaller or star or whatever shape you like
  • • A sprinkle of love

  • • In a bowl mix the butter and the sugar until it’s nice and smooth {I like to use my hands, it’s easy}.
  • • Add the yellow eggs and mix for a minute, add the vanilla and the flour.
  • • Cover the dough with plastic wrap and put it in the fridge for 30 minutes.

Legumes Soup

My family is a Legumes lover, I try to use them weekly in my cooking  just like my mom and my Grandmother used to do when I was a kid. Legumes are so good for your body, full of vitamins and protein.

Today I want to share with you this healthy Soup recipe. Challenge yourself and make it for you and your family and let me know how goes, please. Homemade food is the best and this soup will nourish your soul.

  • 1 cup and half of dry mix of legumes
  • 1 carrot
  • 1 celery
  • 1 small onion
  • 2 potatoes
  • Oil extra virgin 4 tablespoons
  • 2 tomatoes
  • Parmigiano Crust
  • Vegetables broth
  • A sprinkle of love

First thing to do is to soak your dry legumes in water over night or if you are making it for dinner you can do it early morning like I did.

In a pan put the oil and add the celery, carrot and onion chopped finely (this is the soffritto) and stir fry for a minute or 2 and add the legumes drained and rinsed!

Mix everything and add the vegetables broth. Add the tomatoes diced and the Parmigiano Crust if you have it (if you don’t have its ok). Cook everything for half an hour on a slow heat with lid adding a little bit of salt! Add the potatoes that you previously cut in dice and cook for 30 more minutes! Check the salt at the end and add a little bit of oil before to serve it. Delicious, healthy homemade food is the best!

TIP: to make vegetables broth just boils a carrot, onion, celery and salt for 30 minutes.Buon appetito
