Italian Mix Legumes Soup/ Zuppa del Contadino

My family is a Legumes lover, I try to use them weekly in my cooking just like my mom and my Grandmother used to do when I was a kid. Legumes are so good for your body, full of vitamins and protein.

Today I want to share with you this healthy Soup recipe that in Italy its called “zuppa del contadino”/ Farmer soup. I feel healthy already, please challenge yourself and make it for you and your family and let me know how goes, please. Homemade food is the best and this soup will nourish your soul.

Ingredients:

  • 1 cup and half of dry mix of legumes 
  • 1 carrot 
  • 1 celery
  • 1 small onion
  • 2 potatoes 
  • Oil extra virgin 4 tablespoons 
  • Mix of herbs if you like
  • 2 tomatoes 
  • Parmigiano Crust
  • Vegetables broth
  • A sprinkle of love

Method:

First thing to do is to soak your dry legumes in water over night or if you are making it for dinner you can do it early morning like I did. 

In a pan put the oil and add the celery, carrot and onion chopped finely (this is the soffritto) and stir fry for a minute or 2 and add the legumes drained and rinsed!

Mix everything and add the vegetables broth. Add the tomatoes diced, the herbs, and the Parmigiano Crust if you have it ( if you don’t have it’s ok). Cook everything for half an hour on a slow heat with lid adding a little bit of salt! Add the potatoes that you previously cut in dice and cook for 30 more minutes! Check the salt at the end and add a little bit of oil before to serve it. 

Delicious, healthy homemade food is the best! 

TIP: to make a vegetables broth just boil a carrot, onion, celery and salt for 30 minutes.

Gluten Free Gnocchi

I finally found a gluten free gnocchi recipe that I and my family like; my kids didn’t even notice the difference so that it’s a good sign!

This is a great recipe to do with your family so I highly suggest making gnocchi with your kids, you family or your friends. In the kitchen we can build the best, precious, unforgettable memories. In fact I still remember, after all these years, making gnocchi with my grandma and all my little cousins, our job was to roll out the gnocchi! It’s something that will stay in you forever.

Here the recipe for you, I did 2 attempts, the first one with rice flour and it didn’t work but the second time, with all purpose baking flour, it did! I m so happy.

Ingredients:

  • 500 grams potatoes already boiled and mashed with a ricer
  • 200/250 grams gluten free flour for baking  {I used redmill}
  • 1 egg
  • A sprinkle of love.

 

  • Method:
  • Boil the potatoes with the skin, when they are cooked drain them and peel them right away! Remember always peel the potatoes when they are hot.
  • Mash the potatoes with a ricer and put them in a bowl and let them cool down!
  • When the potatoes are ready put them on a chopping board, make a volcano in the middle and put the egg in the hole. With a fork beat the egg and try to incorporate to the potatoes.  
  • Now start to add the flour, a handful and the time, and work your dough until is nice and smooth and it’s not sticky anymore. You will have to work it for 10 minutes.
  • The dough is ready when you can make a nice, firm ball.
  • It’s time now to roll the gnocchi; this is the part where I suggest you to get the kids involved.
  • Take off a handful of the dough and roll that with both hands until you have a rope about the thickness of your thumb. Cut this rope in 2.5 cm lengths.
  • Bring each piece of dough and flip it with your index finger against the inside of your fork. With this technique the gnocchi will catch any sauce🙂.
  • Place your gnocchi on a lightly floured baking sheet.
  • Cook them in boiling water with salt.
  • They are done when they raise to the surface of the water. Put them right away in a big bowl and dressed them with your favorite sauce.
  • I suggest a nice Bolognese sauce or (more quick) butter and sage sauce.

Quinoa ball

Let’s say the truth, kids don’t like quinoa, at least mine but because it is very healthy they have to eat it.

I did try so many recipe and this is our favorite, hopefully will be yours too.

Ingredients:

300 grams quinoa

100 grams carrots cut in small dice

100 grams zucchini cut in small dice

100 grams cornbread mixture or regular breadcrumbs

1 teaspoon fresh parsley or frozen

100 ml oil

Salt

Pepper

A sprinkle of love

 

Method:

First thing you need to wash the quinoa, pour it in 2 cups of boiling water and cook it for 15/20 minutes.

Let it cool down; in the meantime let’s cook the veggies.

In a frying pan put the carrots first add a glass of water and cook them for about 10 minutes and then add the zucchini, a sprinkle of salt , 2 tablespoon of oil and cook them until they are tender.

Let it cool down.

Now it’s time to make our ball so mix the veggie with the quinoa add 2 tablespoon of oil, parsley, salt and pepper and mix with your hand. This part I think is very stress relief.

Take a small piece of mixture, put it in your hand and give it a circle shape.

If does not stick together add some cornbread mix.

Cook them now in the oven for 15/20 minutes.

Chicken Fingers with Honey Garlic Sauce

I m so excited to post this recipe because for the first time, in 12 years living in Vancouver, I finally made what my kids are not allow to eat when we go to the  restaurant: honey  garlic sauce.It was a success, like I always say “homemade is the best”  because you get to use real fresh ingredient.

Most of the time I do the chicken finger from scratch because I don’t trust the frozen prepacked food and, “home-made is the best”.

Homemade are so delicious and easy to make you just need to be organize, follow my recipe and you will see.Let’s do it.

Ingredients for the Chicken Fingers: 

  • 2 chicken breast cut in fingers
  • 2 eggs beaten
  • 3 cups breadcrumbs
  • 1 cup quick rolled oats
  • salt and pepper
  • vegetable oil
  • a sprinkle of love

 

Honey Garlic Sauce:

  • 1 cup of honey
  • 1/4 cup brown sugar
  • 2 garlic cloves chopped finely
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 3 tablespoon white vinegar
  • 1/2 cup water
  • 1 tablespoon cornstarch

 

Method:

  • The first thing to do is to get your station ready it will be more easy.You will need a bowl or plate  for the eggs,one for the breadcrumbs and one plate to put the chicken finger breaded in before to fry them.
  • Mix the breadcrumbs and the oatmeal together and put it in a plate or a bowl,beat the eggs adding some salt and pepper ,season the chicken with salt and pepper.
  • Cut the chicken in fingers like you like and put them first in the eggs and then in the breadcrumbs mixture.
  • In a  frying pan ready put some oil in it (3/4 tablespoon) and turn the heat on medium,when the oil is hot add the chicken fingers.Fry them until they are nice and gold about 5 minutes for side.

 

Honey Garlic Sauce:

  • In a small saucepan add honey,brown sugar, garlic, soy sauce,sesame oil and vinegar.Let it boil.
  • Now in another bowl mix the water with the cornstarch mix very well being and add it to your sauce.
  • This trick is to make your sauce nice and thick.
  • I served with Chicken Fingers with Baked fries it was an amazing dinner and kids LOVED IT.

Gluten-free chocolate cake

When I saw this recipe on TV I was a little bit skeptical but then I made it I had to change my mind big time.
This gluten-free chocolate cake delivers a moist and rich cake so delicious you won’t even notice it is gluten-free.
I served it with strawberry sauce and a spoon of Vanilla ice-cream…divine.
The best is that is very simple and fast to make you just need a food processor or something that can chop finely the chickpea and mix everything together.
Yes chickpea, lets go to see how to make it.

INGREDIENTS:

  • . 1 can of chickpea drained (570 grams)
    . 4 eggs
    . 1 1/2 dark chocolate
    . 3/4 cup white sugar
    . 1/2 teaspoon baking power
    . a sprinkle of love
  • FOR THE STRAWBERRY SAUCE:

  • . 300 grams strawberry
    . 2 tablespoon sugar
    . 1/2 teaspoon vanilla

METHOD:

  • Pre-heat the oven at 350 degrees.Grease a 9 X 9 cake round pan.
    Melt the chocolate.
    In a food processor blend the chickpea and the eggs until smooth add the sugar and at the end the baking power.
    Add the melted chocolate and blend until combined.
    Pour the batter in the cake pan and cook it for 40 minutes until a toothpick comes out clean from the middle of the cake.
    Let it cool down for few minutes so in the meantime you can make your strawberry or any kind of berry that you like and you have handy.
  • Here how to make the sauce;
    Wash strawberries and remove stems; cut large berries in half or roughly chop them.
    Combine strawberries, sugar, and vanilla in a saucepan. Cook over medium-high heat, stirring occasionally. The mixture will sizzle for a while, but then juice will begin to form. Continue stirring; mash a few strawberries with a wooden spoon or heat-proof spatula to help produce the syrup. Cook until sauce thickens, about 15 minutes.
    Remove from heat. In a blender, puree about 1/3 of the sauce, then mix back into remaining topping.
  • Now is time to plate your cake.
    Cut a small piece of it and put it on a nice plate ,pour some strawberry sauce on top and serve it with a tablespoon of vanilla Ice cream…delicious.

Gluten-free crepes

Crepes are one the my family favorite.

This time I wanted to try a gluten free version and it was a success,my hubby did not notice the difference.

This crepes recipe is very versatile, it can be used for lasagna,cannelloni  or like I did today just for breakfast with some Nutella and jam.

 

Ingredients:

  •  300 ml milk
  •  2 eggs
  •  a pinch of salt
  •  100 grams corn starch
  •  a sprinkle of love

 

Method:

  • To make good crepes you will need the right tools.If you don’t have the crepes pan its ok,you just need a small fry pan not bigger then 8 inch other wise it will be difficult to flip them.Make sure that your pan is nonstick and while you are making the crepes it need to be greased. Also make sure to have a soup spoon and always put the same amount of batter in it.
  •  Mix the eggs with the whisk
  •  Add the corn starch and the salt and mix very well
  • Slowly add half of the milk and mix very well
  • Add the rest of the milk
  • Let it rest for 15 minutes
  • Grease your pan with a little bit of oil or butter, be careful to do not use too much oil or butter otherwise the crepes will be too  greasy.
  • Usually what I do put a small piece of butter or a teaspoon of oil in the pan and with the   paper towel  I spread it out.
  • when the pan is warm pour 1 spoon of batter in and try to move the pan a little so the crepes will be nice and round.
  • when the crepes start to come off of the board is ready to be flip,
    •  the other side will take just a minute to cook,remember to grease the pan after 5 crepes.
  •  I served mine with Nutella and jam you can also add fresh fruit,whipping cream whatever you like.

Detox Soup with oriental spice

We are soup lover so I m always looking for new recipe.

A while ago I discover this wonderful blog called  http://blog.giallozafferano.it/msp/  that has a lot of Weight Watchers recipe and I fall in love so today I wanna share one of her recipe that I tried today, Monday after the big Easter Dinner.

We had so much food that today we need to detox our body.

This soup is very easy to make and the vegetable in it are very purifying and full of vitamins and fiber also it has just 3 Weight Watchers point.

You just need few ingredients like carrots, onion, potato, leek and few spice like paprika, cumin, cinnamon and very important Turmeric  that will help you will help detoxify the stomach and intestines and facilitate the elimination of fat.

So let’s do it,let’s flush away some bad fat

 

Ingredients for 4 people

2-3 potato

2-3 carrots

1 leek

1 onion

1 teaspoon cumin

1 teaspoon turmeric

1 teaspoon paprika

1 teaspoon cinnamon

a sprinkle of love

Suggestion:if you have kids used just half teaspoon for every spicy like I did for the first time but next time I will use all teaspoon because they loved it.

 

Method:

Clean your vegetable,peel your carrots and potatoes, cut off the green part of your leek and take off just the white part and cut everything in small pieces.

Put everything in a big pot and add the spices.

Pour the water in covering the vegetable.

Turn the heat on high and let it cook until it starts to boil and then lower down and let it cook for almost an hour until the vegetable are cooked.

Now with your immersion blender mix everything until is nice and creamy.

Add some salt and voila’ dinner is ready
