Quick Bread

I discover this bread recipe few years ago on my favorite Italian Blog “Le ricette di Mysia”. I’m not a baker and this recipe was a really good introduction to the bread world.  

The recipe is really easy to follow, it doesn’t require any kneading, any folding and it takes just few hours for the bread to rise.

I made this bread so many times already and I’m glad lots of people are doing it too now, there is nothing more awarding than making bread from scratch.

I served it with some good extra virgin olive oil, some good cheeses and cold cuts, also after dinner we had it with some Nutella.

  • 500 grams/3 cups and half Flour
  • 370 ml water lukewarm
  • 8 grams or 1 sachet of dry yeast
  • 1 teaspoon of honey
  • 10 grams Salt
  • Love


In bowl put 200 ml water, add the yeast and honey (If you don’t have honey use sugar). Mix well. Add the flour and mix with a wooden spoon. Finally add the salt and the rest of the water, knead quickly with the wooden spoon. The dough must be sticky, soft and grainy. Dust the surface with flour and cover with plastic wrap.

Let the dough rise in the oven turned off with the light on for 1 hour and a half or 2 hours. You can also leave it to rise longer.  After that take the dough and slide it gently on a baking sheet with a spatula previously floured. Gently, with the spatula, divide the dough into 3 parts and move them spaced apart. You will need to get 3 loaves. You can also make just 2 bigger loaves or one big. Bake at 410 degrees for 30 minutes. The result of this bread is simply exceptional. Buon Appetito

Mini Sweet Focaccias bread with Nutella

Mini Focaccias with Nutella

These mini focaccias, with the heart full of Nutella, are a very delicious, easy and fast dessert. They are like sweet bread but they don’t need to rise, the preparation time is just 20 minutes and you can cook them on the stove. It’s a perfect easy recipe for  a Sunday treat for your kids or family. I got the recipe from my favourite Italian blog Mysia! You can stuff them with jam if you don’t have Nutella.

Ingredients: collage mini focaccia

  • 250 grams/9 oz flour
  • 140 grams/5 oz sugar
  • 100 ml water
  • 20 ml oil
  • 2 teaspoons of baking powder
  • ½ teaspoon vanilla
  • Nutella
  • Icing sugar
  • A sprinkle of love





In a bowl mix flour, sugar and baking powder, make a hole and put in the water, vanilla and oil.

Mix until the dough is nice and smooth.

Roll out your dough, with a rolling pin, on your board where you sprinkled some flour.

Now with a cookies cutter cut out the shape of your mini focaccia, you will be able to cut out 22/24 shapes.

On half of them put a teaspoon of Nutella and close them out with the other half.


Now you can cook your mini focaccias on a frying pan previously lightly oiled, 3 or 4 minutes for side.

Sprinkle some icing sugar and some love and serve to your family or friends.

Chickpea Flat Bread with Tzatziki sauce

I love chickpea, growing up in Italy one of my favorite dish was pasta e ceci/ pasta and chickpea. I found this recipe on one of my favorite website http://theitaliantaste.com/ and I really liked it so I wanted to try it out.

It’s very healthy; I think everybody knows how chickpea are good for you so you should give it a try also its gluten free so less calorie to think about it. With this flat bread I wanted to try the Tzatziki sauce, it’s a Greek appetizer that I tried at one of my favorite restaurant one day, it’s really good and you can serve it with any kind of bread.


  • 150 gr (2/3 cup) chickpea flour
  • 450 ml water
  • 100 ml extra virgin olive oil
  • Salt and Pepper
  • A sprinkle of love



In a bowl put your flour and gently add the water stirring constantly to avoid lumps. When the mixture is nice and smooth you need to cover it with a lid and let stay for 4/5 hours or even better over night, mixing it few times.

After that take the lid off and with slotted spoon remove the foam that has formed on the top of your mixture.Put half of the oil in the mixture it and stir for a minute, pour the other oil on your round baking sheet (9 inch wide) spread it out and now pour the chickpea mixture on.

Turn the oven at 350 and bake your flat bread for 30/40 minutes until is nice and gold…enjoy it.

Tzatziki sauce


  • 400 gr Greek yogurt
  • 1 large cucumber
  • 1 Tablespoon Dill chopped finely
  • 2 tablespoon vinegar
  • 4 Tablespoon Extra virgin olive
  • 2 Clove garlic   chopped finely
  • Salt to Taste
  • a sprinkle of love


Chop the ends of the cucumber, wash it and grate it, place a strainer on a bowl so that the cucumber water can drain away.
Squeeze out excess water if any from the cucumber.

In a bowl mix the Greek yogurt, along with the squeezed cucumber and chopped dill and garlic.
Towards the end add slowly, little by little, both the oil and the vinegar, and at last salt to taste. This sauce it can be serve with any kind of bread or with meat and fish and it can be used for spread or dip. Buon Appetito
Personal suggestion: the cucumber water can be used like a Tonic for your face, try it on your skin it will feel nice and fresh.
