Healthy Pumpking Muffin Recipe

Yesterday I had the pleasure to help my son Kindergarten class to make these healthy Pumpkin muffin,the kids had so much fun.

I fall in  love with the recipe because it is was so simple and healthy  so when I come home I had to made them right away.

It was a perfect healthy after school snack,try it and let me know what do you think.

I highly  suggest to make them with your kids they will have fun.


1 small can pumpkin (15oz)

1/2 cup applesauce

2 eggs

1 teaspoon vanilla

1/2 cup brown sugar

2 cup of flour

1 teaspoon baking powder

1/2 teaspoon baking soda

2 1/2 teaspoon pumpkin spice or you favorite spice (I used cinnamon)

1/2 teaspoon salt

A sprinkle of love


Pre-heat the oven at 350.

Grease the bottom of muffin cups.

Combine all the ingredients starting with the pumpking and the apple sauce, mix a little bit add the eggs the vanilla and the brown sugar and mix again.Now add all the dry ingredients and you are simply done..

Pour the batter into muffin cups and bake for about 25 minutes until they are puffed and a nice color golden brown.

French Toast Stick with Cinnamon twist

If you are a french toast lover you will love this yummy recipe, its easy and a great way to start the morning.



  • 8 slices thick-cut slice bread (for gluten free version use gluten free bread)
    4  eggs
    1 cup heavy cream
    2 1/2 teaspoons cinnamon
    1 Tablespoon sugar
    1 Tablespoon vanilla extract
    2 tablespoon butter for the frying pan
    Maple syrup, for serving

Cut each slice of bread into four thick sticks, set aside.

In a large bowl, whisk together the eggs, heavy cream, cinnamon, sugar and vanilla. Dip each piece of bread in the egg mixture, turning to coat it on all sides so that it’s well-saturated with the custard.

Shake off any excess and place the coated bread on a large plate or baking dish. Repeat the dipping process with the remaining pieces of bread.

Heat a large sauté pan over medium heat and add the butter. Once the butter has melted, place several of the coated sticks in a single layer in the pan.  Cook until golden brown on one side then flip and continue cooking until the sticks are golden brown and slightly crisped on all edges.

Serve immediately with maple syrup for dipping and fresh fruit

Breakfast for Canadian Champion

Hello friends,

we are very happy today that Canada won a Gold Medal at the hockey game.

To make my husband more happy I ve made this delicious pancake(no store box).  

Hope you enjoy this easy recipe and Go Canada Go.


  • 1 cup of flour
  • 2 tablespoon sugar
  • 2 tablespoon baking power
  • 1 teaspoon salt
  • 1 cup of milk
  • 2 tablespoon butter(I  used vegetable  Oil same amount)
  • 1 egg
  • few blueberry (optional)
  • a sprinkle of love


  • Mix all the dry ingredients and then  add the egg and at the end milk.
  • Do not over mix
  • In a crepes pan or fry pan cook your pancake.
  • Usually I pour I scoop at the time so the pancake are all the same.
  • You can serve your pancake with Nutella or like I did today warm maple syrup and chocolate sauce

Breakfast for champion

This is my family idea of breakfast for champions:crepes with nutella.

We seriously loved them and its so easy to do.

With this recipe you can make sweet crepes and salty crepes stuffed with ham,prosciutto mozzarella and more.

Ingredients for 8 crepes:

125 grams of flour
2 eggs
300 ml milk


In a bowl put the flour and gently pour the milk stirring with a whisk.

In a separate bowl put the eggs and gently beat them.

After that you can add them to the other bowl with the flour and milk.

Whisk nicely for few minutes and put the bowl in the fridge to rest for 30 minutes cover with plastic wrap.

Get your crepes pan ready,melt some butter and pour some of the batter and cook few minutes for side.

When your crepes are ready you can add nutella,jam,philadelphia cheese,fruit or anything that you like.
Sometime i just sprinkle some sugar and lemon juice but today we had them with nutella and strawberry
