Chicken cutlets 

Chicken cutlets are definitely one of kids favorite dish. My nonna/grandmother used to make it for me and my brothers all the time. It was one of our favorite, of course who doesn’t like fried! My nonno/grandpa used to say “fritte sono buone anche le scarpe/ even shoes are good when are deep fried”.

This recipe is very simple and basic, I used chicken but you can use turkey, veal or the kind of meat that you like. What I usually do I buy the package of chicken breast and when I go home I cut it in slices with a good knife. If you are not confident enough with the knife, freeze the breast for 1 hour, it will be more easy to cut it after.

Ingredients:

  • 600 grams of Chicken breast cutlets
  • 2 eggs
  • Breadcrumbs
  • 1 tablespoon Parmesan cheese
  • Salt
  • A sprinkle of love
  • Lemon
  • OIL to fry I used Canola

Method:

After you cut out your slices from the breast get your station ready. In a large plate put the eggs, add the salt and the Parmesan and beat quickly for few minutes. Put the breadcrumbs in a flat plate. Get your working station ready putting the chicken breast in your left side, then the eggs, the breadcrumbs and a clean plate to put your breaded slices.

Get a slices of chicken deep it in the eggs in the both side and right away in the breadcrumbs. When the slice is in the breadcrumbs with your hand give it few punch, it will help the slice to be nice and flat, it will be more easy to cook it and it will cook evenly.

Put the chicken breast breaded in a plate and start to fry them for few minutes both sides, in a very hot oil. When they are ready put them in a serving plate cover with paper towel, it will help to dry out some oil.

You can serve them with a nice salad, potato, tomato salad or any kind of vegetable! I always serve them with a slice of lemon too.

Chicken Fingers with Honey Garlic Sauce

I m so excited to post this recipe because for the first time, in 12 years living in Vancouver, I finally made what my kids are not allow to eat when we go to the  restaurant: honey  garlic sauce.It was a success, like I always say “homemade is the best”  because you get to use real fresh ingredient.

Most of the time I do the chicken finger from scratch because I don’t trust the frozen prepacked food and, “home-made is the best”.

Homemade are so delicious and easy to make you just need to be organize, follow my recipe and you will see.Let’s do it.

Ingredients for the Chicken Fingers: 

  • 2 chicken breast cut in fingers
  • 2 eggs beaten
  • 3 cups breadcrumbs
  • 1 cup quick rolled oats
  • salt and pepper
  • vegetable oil
  • a sprinkle of love

 

Honey Garlic Sauce:

  • 1 cup of honey
  • 1/4 cup brown sugar
  • 2 garlic cloves chopped finely
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 3 tablespoon white vinegar
  • 1/2 cup water
  • 1 tablespoon cornstarch

 

Method:

  • The first thing to do is to get your station ready it will be more easy.You will need a bowl or plate  for the eggs,one for the breadcrumbs and one plate to put the chicken finger breaded in before to fry them.
  • Mix the breadcrumbs and the oatmeal together and put it in a plate or a bowl,beat the eggs adding some salt and pepper ,season the chicken with salt and pepper.
  • Cut the chicken in fingers like you like and put them first in the eggs and then in the breadcrumbs mixture.
  • In a  frying pan ready put some oil in it (3/4 tablespoon) and turn the heat on medium,when the oil is hot add the chicken fingers.Fry them until they are nice and gold about 5 minutes for side.

 

Honey Garlic Sauce:

  • In a small saucepan add honey,brown sugar, garlic, soy sauce,sesame oil and vinegar.Let it boil.
  • Now in another bowl mix the water with the cornstarch mix very well being and add it to your sauce.
  • This trick is to make your sauce nice and thick.
  • I served with Chicken Fingers with Baked fries it was an amazing dinner and kids LOVED IT.

Veal Escalopes with Lemon

This is one of the most popular dish in Italy and in every Italian restaurant all around the word.

The best part is that is very easy to make and your family will love it.

I used veal escalopes but you can use chicken or turkey breast, remember you are in control of your dish so you can add or change how you like.

 

Ingredients :

4 veal escalopes

2/3 tablespoon flour

1/4 cup butter

4 tablespoon olive oil

4 tablespoon white wine (any kind)

3 tablespoon lemon juice

salt and freshly ground black pepper

lemon wedge and parsley for the decoration

a sprinkle of love

 

Method:

Put your escalopes between 2 sheet of plastic paper and pound until they are thin.

Cut the escalopes in half and coat them with flour,seasoned with salt and pepper.

Melt the butter with  oil in a large fry pan,add the escalopes.

Fry them on a medium to high heat for 1/2 minutes for side until they have a nice gold color.

Remove them from the pan, add the wine and lemon juice in the frying pan,lowering  the heat down, 

Let the wine evaporate for a minute and then put your escalopes back to the frying pan.

Spoon the lemon and wine sauce over the meat.shake the pan on a medium heat until the escalopes are coated with the yummy sauce.

Serve this dish with a nice salad or some green beans,don’t forget to decorate your plate with lemon wedge and parsley.
