Healthy Pumpking Muffin Recipe

Yesterday I had the pleasure to help my son Kindergarten class to make these healthy Pumpkin muffin,the kids had so much fun.

I fall in  love with the recipe because it is was so simple and healthy  so when I come home I had to made them right away.

It was a perfect healthy after school snack,try it and let me know what do you think.

I highly  suggest to make them with your kids they will have fun.

Ingredients:

1 small can pumpkin (15oz)

1/2 cup applesauce

2 eggs

1 teaspoon vanilla

1/2 cup brown sugar

2 cup of flour

1 teaspoon baking powder

1/2 teaspoon baking soda

2 1/2 teaspoon pumpkin spice or you favorite spice (I used cinnamon)

1/2 teaspoon salt

A sprinkle of love

Method:

Pre-heat the oven at 350.

Grease the bottom of muffin cups.

Combine all the ingredients starting with the pumpking and the apple sauce, mix a little bit add the eggs the vanilla and the brown sugar and mix again.Now add all the dry ingredients and you are simply done..

Pour the batter into muffin cups and bake for about 25 minutes until they are puffed and a nice color golden brown.

Easy moist Banana and blueberry muffin

You’ll be blown away by the great taste and moist texture of these banana-blueberry muffins!

Alert:they are very addictive in fact every time I make them they  disappear in no time.

If you don’t have the blueberry its ok, you can also add nuts.

Ingredients for 12 muffins:

  • 2 banana very soft
    half cup melted butter
    1 egg
    1 teaspoon vanilla

    For the dry ingredients;
    1 cup and half flour
    half cup sugar (I don’t put any)
    2 teaspoon baking powder
    1 teaspoon baking soda
    half teaspoon salt

    half cup blueberry fresh or frozen
    2 tablespoon milk
    a sprinkle of love

Method:

  • This is a great activity for kids in fact today my son, that he is 5, helped me to make them.

    Mashes the banana add the melted butter, the egg and the vanilla.

    Mix all the dry ingredients together and slowly add them to the banana mixture.

    At the end add the blueberry and the milk.

  • Mix very well and with a spoon, pour the muffin mixture in your muffin tray.
    Bake for 20/25 minutes until are nice and gold

Carrots and Apple Healthy Sponge Cake

 

This cake is very delicious, light and healthy, the combination of apples and cinnamon will make your house smell divine.

My kids love it and sometimes I make it for breakfast, also it does stay for a few day on the counter,  you will just need to cover it with a kitchen towel.

Also I highly suggest to make it with your children,it can be a great activity at the end of the day kids love to stay around mommy.

Ingredients:

  • 100 grams flour for cake
  • 100 grams whole wheat flour
  • 125 ml vegetable oil
  • 100 grams brown sugar
  • 175 grams apple chopped up
  • 175 grams carrots shredded
  • 75  grams nuts I used almond chopped
  • 2    eggs
  • 2   tablespoon honey
  • 2   teaspoon cinnamon
  • 1 teaspoon baking soda
  • pinch of salt
  • a sprinkle of love (don’t ever forget that)

 

Method:

  • In a bowl whisk   eggs and sugar, honey, oil and then add the apples, carrots and nuts.
  • In a separate bowl sift flours, baking soda,  salt and cinnamon.
  • Add the flours mixture to the first bowl and mix for a bit.
  • In a cake pan spread some butter, put the parchment paper around and pour the mixture.
  • Bake in the oven for 45 minutes at 350
