Gluten-free chocolate cake

When I saw this recipe on TV I was a little bit skeptical but then I made it I had to change my mind big time.
This gluten-free chocolate cake delivers a moist and rich cake so delicious you won’t even notice it is gluten-free.
I served it with strawberry sauce and a spoon of Vanilla ice-cream…divine.
The best is that is very simple and fast to make you just need a food processor or something that can chop finely the chickpea and mix everything together.
Yes chickpea, lets go to see how to make it.

INGREDIENTS:

  • . 1 can of chickpea drained (570 grams)
    . 4 eggs
    . 1 1/2 dark chocolate
    . 3/4 cup white sugar
    . 1/2 teaspoon baking power
    . a sprinkle of love
  • FOR THE STRAWBERRY SAUCE:

  • . 300 grams strawberry
    . 2 tablespoon sugar
    . 1/2 teaspoon vanilla

METHOD:

  • Pre-heat the oven at 350 degrees.Grease a 9 X 9 cake round pan.
    Melt the chocolate.
    In a food processor blend the chickpea and the eggs until smooth add the sugar and at the end the baking power.
    Add the melted chocolate and blend until combined.
    Pour the batter in the cake pan and cook it for 40 minutes until a toothpick comes out clean from the middle of the cake.
    Let it cool down for few minutes so in the meantime you can make your strawberry or any kind of berry that you like and you have handy.
  • Here how to make the sauce;
    Wash strawberries and remove stems; cut large berries in half or roughly chop them.
    Combine strawberries, sugar, and vanilla in a saucepan. Cook over medium-high heat, stirring occasionally. The mixture will sizzle for a while, but then juice will begin to form. Continue stirring; mash a few strawberries with a wooden spoon or heat-proof spatula to help produce the syrup. Cook until sauce thickens, about 15 minutes.
    Remove from heat. In a blender, puree about 1/3 of the sauce, then mix back into remaining topping.
  • Now is time to plate your cake.
    Cut a small piece of it and put it on a nice plate ,pour some strawberry sauce on top and serve it with a tablespoon of vanilla Ice cream…delicious.

Chickpea Flat Bread with Tzatziki sauce

I love chickpea,growing up in Italy one of my favorite dish was pasta e ceci/ pasta and chickpea.

I found  this recipe on one of my favorite website http://theitaliantaste.com/ and I really liked it so I wanna to try it out.

Its very healthy,I think everybody knows how chickpea are good for you so you should give it a try also its gluten free so less calorie to think about it

With this flat bread I wanted  to try the Tzatziki sauce,its a Greek appetizer that I tried at one of my favorite restaurantone day,its really good and you can serve it with any kind of bread .ok so let’s start with the flat bread first

Ingridients:
150g (2/3 cup) chickpea flour

450ml (1.9 cup) water
100ml (1/2 cup) extra virgin olive oil
Salt and freshly ground black pepper if you like

Method:

In a bowl put your flour and gently add the water  stirring constantly to avoid lumps.

When your mixture is nice and smooth you need to cover it with a lid and let stay for 4/5 hours or even better over night mixing it few times.

After that take the lid off and with slotted spoon you have to remove the foam that has formed on the top of your mixture.

Put half of the oil in the mixture it and stir for a minute,pour the other oil on your round baking sheet (9 inch wide)spread it out and now pour the chickpea mixture on

Turn the oven at 350 and bake your flat bread for 30/40 minutes until is nice and gold…enjoy

Now its time for the Tzatziki sauce that will go perfectly with the flat bread but you can also serve it with some oil and balsamic vinegar

Ingridients:

400 Gram Greek yogurt

1 large cucumber  Dill

1 Tablespoon Dill chopped finely

2 tablespoon vinegar

4 Tablespoon Extra virgin olive

2 Clove garlic   chopped finely

Salt to Taste

Method:

Chop the ends of the cucumber, wash and grate the cucumber, place a strainer on a bowl so that the cucumber water can drain away.
Squeeze out excess water if any from the cucumber.

In a bowl mix the Greek yogurt, along with the squeezed cucumber and chopped dill and garlic.
Towards the end add slowly, little by little, both the oil and the vinegar, and at last salt to taste.

This sauce it can be serve with any kind of bread or with meat and fish

Stir-Fry cabbage

Cabbage is one of my favorite vegetable.

We used to grow our own cabbage back in Italy so this lovely, healthy vegetable it was on our family dinner table every week.

This recipe is very easy and quick to make also very healthy and low calorie collage verza per blog

Ingredients:

1 cabbage

2 cloves of garlic

2 glasses of broth or 1 cube bouillon dissolved in water

1 teaspoon of oil EVO

salt and pepper to taste

a sprinkle of love

Method:

First thing we need to cut our cabbage,you have to cut it in half first then in quarters.Now cut it up in strips.

Get your fry pan now   and pour the oil and garlic and let them stir fry for a bit  until the garlic has a nice golden color,add the cabbage and the broth,salt and pepper and give it a nice mix.

Cook it for 20 minutes with a lid on.Check your cabbage once and a while and add more water if it need it.

When the cabbage is nice and soft is ready to be eat

Roasted Asparagus and Red Peppers

I love vegetable and we all now how important they are for our body so I m always looking for new recipe,fast and kids friendly.

I m very thankful that my 2 kids love vegetable and lately they have a passion for Asparagus so I wanted to try this new recipe,its a weight watchers recipe with 1 point and the result was amazing.We really enjoy it plus is simple and done in 20 minutes …so are you ready to write it down?Let do it and don’t forget to sparkle with some love 

Ingredients for 4 people 

1 pound asparagus trimmed and fibrous stalk peeled

1 or 2 pepper I used one yellow and 1 red,seeded and cut into 1/2 inch strip

1 lemon

1 teaspoon olive oil

1/2 teaspoon salt

1/4 teaspoon crushed red pepper

 

Method:

 

preheat the oven to 400 F.Get your baking sheet ready and spray some oil on it or like a did just put some parchment paper.

In a bowl  put the asparagus the  red pepper,squeeze 1 tablespoon juice from the lemon,add the oil salt and crushed red pepper.Toss very well Immagine 

 

Arrange the vegetable on the baking sheet.

Bake until tender for 15/20 minutes

Put you vegetable on a bowl and great 1 teaspoon zest from the lemon and the rest of the juice
