It’s a perfect easy recipe for  a Sunday treat for your kids or family. I got the recipe from my favourite Italian blog Mysia! If you make it let me know and if you need help message me or call me I will be happy to help you.

You can stuff them with jam if you don’t have Nutella.

Ingredients: collage mini focaccia

  • 250 grams/9 oz flour
  • 140 grams/5 oz sugar
  • 100 ml water
  • 20 ml oil
  • 2 teaspoons of baking powder
  • ½ teaspoon vanilla
  • Nutella
  • Icing sugar
  • A sprinkle of love

Method:

In a bowl mix flour, sugar and baking powder, make a hole and put in the water, vanilla and oil.

Mix until the dough is nice and smooth.

Roll out your dough, with a rolling pin, on your board where you sprinkled some flour.

Now with a cookies cutter cut out the shape of your mini focaccia, you will be able to cut out 22/24 shapes.

On half of them put a teaspoon of Nutella and close them out with the other half.

Now you can cook your mini focaccias on a frying pan previously lightly oiled, 3 or 4 minutes for side.

Sprinkle some icing sugar and some love and serve to your family or friends.

Gluten-free crepes

Crepes are one the my family favorite.

This time I wanted to try a gluten free version and it was a success,my hubby did not notice the difference.

This crepes recipe is very versatile, it can be used for lasagna, cannelloni  or like I did today just for breakfast with some Nutella and jam.

Ingredients:

  •  300 ml milk
  •  2 eggs
  •  a pinch of salt
  •  100 grams corn starch
  •  a sprinkle of love

Method:

  • To make good crepes you will need the right tools. If you don’t have the crepes pan its ok,you just need a small fry pan not bigger then 8 inch other wise it will be difficult to flip them.Make sure that your pan is nonstick and while you are making the crepes it need to be greased. Also make sure to have a soup spoon and always put the same amount of batter in it.
  •  Mix the eggs with the whisk
  •  Add the corn starch and the salt and mix very well
  • Slowly add half of the milk and mix very well
  • Add the rest of the milk
  • Let it rest for 15 minutes
  • Grease your pan with a little bit of oil or butter, be careful to do not use too much oil or butter otherwise the crepes will be too  greasy.
  • Usually what I do put a small piece of butter or a teaspoon of oil in the pan and with the   paper towel  I spread it out.
  • when the pan is warm pour 1 spoon of batter in and try to move the pan a little so the crepes will be nice and round.
  • when the crepes start to come off of the board is ready to be flip,
    •  the other side will take just a minute to cook, remember to grease the pan after 5 crepes.
  •  I served mine with Nutella and jam you can also add fresh fruit, whipping cream whatever you like.

In a bowl put the eggs and the sugar and beat for a little bit until is nice and fluffy

Add the milk until your cake batter is nice and smooth.

Now put the parchment paper in your baking sheet and pour the mixture in it.

Put it in the oven at 420 and cook for 5/7 minutes, until the top is gold.

Now on your working board put some parchment paper and overthrow the cookie dough.

Gently peel off the parchment paper, that you have used to cook the dough, and while is still hot spread your Nutella.

I suggest to use a lot of it 🙂

Spread Nutella in all the surface and gently start to roll the dough using the parchment paper.

Cover the roll with the paper and put it in the fridge for 1 hour before to serve it.

Put it on your serving plate with some icing sugar, it is going to be delicious! You can also substitute the Nutella with jam or whipping cream with strawberries!

In a bowl put the flour and gently pour the milk stirring with a whisk.

In a separate bowl put the eggs and gently beat them.

After that you can add them to the other bowl with the flour and milk.

Whisk nicely for few minutes and put the bowl in the fridge to rest for 30 minutes cover with plastic wrap.

Get your crepes pan ready, melt some butter and pour some of the batter and cook few minutes for side.

When your crepes are ready you can add nutella, jam, philadelphia cheese, fruit or anything that you like.
