Quinoa ball

Let’s say the truth, kids don’t like quinoa, at least mine but because it is very healthy they have to eat it.

I did try so many recipe and this is our favorite, hopefully will be yours too.

Ingredients:

300 grams quinoa

100 grams carrots cut in small dice

100 grams zucchini cut in small dice

100 grams cornbread mixture or regular breadcrumbs

1 teaspoon fresh parsley or frozen

100 ml oil

Salt

Pepper

A sprinkle of love

 

Method:

First thing you need to wash the quinoa, pour it in 2 cups of boiling water and cook it for 15/20 minutes.

Let it cool down; in the meantime let’s cook the veggies.

In a frying pan put the carrots first add a glass of water and cook them for about 10 minutes and then add the zucchini, a sprinkle of salt , 2 tablespoon of oil and cook them until they are tender.

Let it cool down.

Now it’s time to make our ball so mix the veggie with the quinoa add 2 tablespoon of oil, parsley, salt and pepper and mix with your hand. This part I think is very stress relief.

Take a small piece of mixture, put it in your hand and give it a circle shape.

If does not stick together add some cornbread mix.

Cook them now in the oven for 15/20 minutes.

Lentils and quinoa salad

Lentils bring back memories of my childhood, growing up in Italy, one of our weekly family dinners was pasta with lentils, lentil salad or lentils saute.

Today I want to share with you a modern version of my Mom’s lentil salad adding quinoa.

This salad is an explosion of wellness, if you are a lentils lover you will fall in love with it;  with quinoa, zucchini,  carrots and olives it can be a main dish served by itself as a gluten free meal or with a nice homemade bread.

Ingredients:

80 grams quinoa

100 grams of dry lentils

1 clove of garlic

1 bay leaf

half zucchini

1 carrot

1 tomato

2 spoons black olives without pits

half onion cut finely

salt

extra virgin olive oil

a sprinkle of love

Method:

Rinse your quinoa and put it in a pan with water. Let it cook for 20/25 minutes (read the instruction on the back of your quinoa package). When is done let it cool down.

In a separate pan with water, garlic and bay leaf boil your lentils.

With dry lentils sit in water overnight then boil for just 5-7 minutes.

In a bowl put your diced tomatoes, your shredded zucchini and shredded carrot, your olives cut in quarters and the onion cut in a very small pieces.

When the quinoa and the lentils are cooked and cooled down put them with the veggies in the bowl and dress them with extra virgin olive oil, salt and pepper.

Put your salad in the fridge until is time to serve.

Quinoa and Smoked Salmon Burger

Quinoa is one of the most super food and  it has some powerful health benefit. 

It’s high in protein and also very importantly it is gluten free. With all these benefits I try to cook quinoa once a week for my family.

Ingredients for 6 patties:

1 and 1/2 cup red quinoa (I think you can use any kind)

2 cup of water

a package of smoked salmon (mine was 275 grams)

2 egg

3 tablespoon breadcrumbs

salt and pepper

parsley

seeds oil

salt and pepper just a pinch

a sprinkle of love

 

Method:

Pour the quinoa in a saucepan with the water and let it cook for 20 minutes (just double check the instruction on the quinoa box).

When the quinoa is cooked, drain it and leave it on a side to cool down.

After that put the quinoa in a bowl add the parsley, eggs and chopped salmon Imageand the salt and pepper

Mix very well with your hands until the egg is absorbed.

Now is time to add the breadcrumbs to the mixture so it will come nice and compact.

Bring a frying pan and put 3 tablespoons of oil and turn the heat on medium in the meantime make your pattie, gently press them down.

Your patties are now ready to cook so you will put them in the frying pan and let them cook for 4-5 minutes per side.

It’s very important that the oil is not too hot otherwise the inside of your patties won’t cook very well.

If you want a Gluten free version just use some rice flour or cornbread mix.

Serve your patties with a nice bun.
