Tomato Sauce

 

Tomato sauce (sugo al pomodoro) is an Italian classic and there is nothing better than to prepare it yourself (the one that you buy at the supermarket is miles away from matching this homemade sauce). The recipe is easy, the ingredients are extremely easy to find and it is also very cheap to make.

Ingredients:

  • 800 ml Peeled Tomatoes
  • 40 grams Onion (finely chopped) or 2 gloves of garlic
  • 40 ml Extra virgin olive oil (plus splash to complete the sauce at the end)
  • 1 tsp Sugar
  • Few basil leaves
  • Salt for seasoning
  • A sprinkle of love

Method:

  • Chop the onion; put the oil in a sauce pan. Heat the oil and then add the onions.
  • Sweat off the onion over medium heat, until it colors {2/3 minutes}
  • Add the tomatoes, stir well.
  • Cover the pan, lower the heat and let it cook for 10 minutes, after that add the sugar! Give it a good stir and let it cook for 20/30 minutes and the sauce is thick.
  • 10 minutes before to finish put the salt, amount that you like and at the end the basil.
  • Buon Appetito

Chicken Fingers with Honey Garlic Sauce

I m so excited to post this recipe because for the first time, in 12 years living in Vancouver, I finally made what my kids are not allow to eat when we go to the  restaurant: honey  garlic sauce.It was a success, like I always say “homemade is the best”  because you get to use real fresh ingredient.

Most of the time I do the chicken finger from scratch because I don’t trust the frozen prepacked food and, “home-made is the best”.

Homemade are so delicious and easy to make you just need to be organize, follow my recipe and you will see.Let’s do it.

Ingredients for the Chicken Fingers: 

  • 2 chicken breast cut in fingers
  • 2 eggs beaten
  • 3 cups breadcrumbs
  • 1 cup quick rolled oats
  • salt and pepper
  • vegetable oil
  • a sprinkle of love

 

Honey Garlic Sauce:

  • 1 cup of honey
  • 1/4 cup brown sugar
  • 2 garlic cloves chopped finely
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 3 tablespoon white vinegar
  • 1/2 cup water
  • 1 tablespoon cornstarch

 

Method:

  • The first thing to do is to get your station ready it will be more easy.You will need a bowl or plate  for the eggs,one for the breadcrumbs and one plate to put the chicken finger breaded in before to fry them.
  • Mix the breadcrumbs and the oatmeal together and put it in a plate or a bowl,beat the eggs adding some salt and pepper ,season the chicken with salt and pepper.
  • Cut the chicken in fingers like you like and put them first in the eggs and then in the breadcrumbs mixture.
  • In a  frying pan ready put some oil in it (3/4 tablespoon) and turn the heat on medium,when the oil is hot add the chicken fingers.Fry them until they are nice and gold about 5 minutes for side.

 

Honey Garlic Sauce:

  • In a small saucepan add honey,brown sugar, garlic, soy sauce,sesame oil and vinegar.Let it boil.
  • Now in another bowl mix the water with the cornstarch mix very well being and add it to your sauce.
  • This trick is to make your sauce nice and thick.
  • I served with Chicken Fingers with Baked fries it was an amazing dinner and kids LOVED IT.

Chickpea Flat Bread with Tzatziki sauce

I love chickpea,growing up in Italy one of my favorite dish was pasta e ceci/ pasta and chickpea.

I found  this recipe on one of my favorite website http://theitaliantaste.com/ and I really liked it so I wanna to try it out.

Its very healthy,I think everybody knows how chickpea are good for you so you should give it a try also its gluten free so less calorie to think about it

With this flat bread I wanted  to try the Tzatziki sauce,its a Greek appetizer that I tried at one of my favorite restaurantone day,its really good and you can serve it with any kind of bread .ok so let’s start with the flat bread first

Ingridients:
150g (2/3 cup) chickpea flour

450ml (1.9 cup) water
100ml (1/2 cup) extra virgin olive oil
Salt and freshly ground black pepper if you like

Method:

In a bowl put your flour and gently add the water  stirring constantly to avoid lumps.

When your mixture is nice and smooth you need to cover it with a lid and let stay for 4/5 hours or even better over night mixing it few times.

After that take the lid off and with slotted spoon you have to remove the foam that has formed on the top of your mixture.

Put half of the oil in the mixture it and stir for a minute,pour the other oil on your round baking sheet (9 inch wide)spread it out and now pour the chickpea mixture on

Turn the oven at 350 and bake your flat bread for 30/40 minutes until is nice and gold…enjoy

Now its time for the Tzatziki sauce that will go perfectly with the flat bread but you can also serve it with some oil and balsamic vinegar

Ingridients:

400 Gram Greek yogurt

1 large cucumber  Dill

1 Tablespoon Dill chopped finely

2 tablespoon vinegar

4 Tablespoon Extra virgin olive

2 Clove garlic   chopped finely

Salt to Taste

a sprinkle of love

Method:

Chop the ends of the cucumber, wash and grate the cucumber, place a strainer on a bowl so that the cucumber water can drain away.
Squeeze out excess water if any from the cucumber.

In a bowl mix the Greek yogurt, along with the squeezed cucumber and chopped dill and garlic.
Towards the end add slowly, little by little, both the oil and the vinegar, and at last salt to taste.

This sauce it can be serve with any kind of bread or with meat and fish
