Tomato Sauce

 

Tomato sauce (sugo al pomodoro) is an Italian classic and there is nothing better than to prepare it yourself (the one that you buy at the supermarket is miles away from matching this homemade sauce). The recipe is easy, the ingredients are extremely easy to find and it is also very cheap to make.

Ingredients:

  • 800 ml Peeled Tomatoes
  • 40 grams Onion (finely chopped) or 2 gloves of garlic
  • 40 ml Extra virgin olive oil (plus splash to complete the sauce at the end)
  • 1 tsp Sugar
  • Few basil leaves
  • Salt for seasoning
  • A sprinkle of love

Method:

  • Chop the onion; put the oil in a sauce pan. Heat the oil and then add the onions.
  • Sweat off the onion over medium heat, until it colors {2/3 minutes}
  • Add the tomatoes, stir well.
  • Cover the pan, lower the heat and let it cook for 10 minutes, after that add the sugar! Give it a good stir and let it cook for 20/30 minutes and the sauce is thick.
  • 10 minutes before to finish put the salt, amount that you like and at the end the basil.
  • Buon Appetito

Tomato confit

I love summer and I love tomatoes. Me and my daughter like to eat them at any time of the day, its our favorite snack.We are lucky enough to have our own grow tomatoes so in the summer its a tomatoes party every night.

Tomato confit are practically slow roasted in the oven at high temperature.This recipe is very versatile; the tomatoes confit  can be used like a side dish or like a dressing for your pasta,Its a very tasty dish. I suggest you to use a good oil extra vergin if possible.

Ingredients:

3 cup of cherries tomatoes or grape

1/4 cup oil evo plus 2 tablespoon

1 teaspoon Oregano

2 garlic cloves

1/3 cup parsley

2 cups bread crumbs

salt

a sprinkle of love

Method:

Preheat the oven at 400 degrees. Cut the tomatoes in half and place them in a baking dish covered with parchment paper.Add the 2 tablespoon of oil,oregano, salt and toss everything.

Place the garlic, parsley and 1/2 teaspoon of salt in a bowl and add the garlic{you can chopped it if you like}.Add the breadcrumbs and the oil and mix everything well.Sprinkle the crumbs on top of your tomatoes.

Bake for 30/40 minutes until the bread crumbs are nice and gold.You can now serve the tomatoes like a side dish, you can serve them on a piece of bread or you can use them to dress you pasta. If you do that I suggest you, 3 minutes before the pasta is ready, to put the amount of tomatoes that you wanna use for your pasta in a stir fry pan.Add 2 tablespoon of the pasta water, add the cooked pasta and stir fry for a minute or 2.Add some oil at the end. Yummy Delicious tasty dish.

Lentils and quinoa salad

Lentils bring back memories of my childhood, growing up in Italy, one of our weekly family dinners was pasta with lentils, lentil salad or lentils saute.

Today I want to share with you a modern version of my Mom’s lentil salad adding quinoa.

This salad is an explosion of wellness, if you are a lentils lover you will fall in love with it;  with quinoa, zucchini,  carrots and olives it can be a main dish served by itself as a gluten free meal or with a nice homemade bread.

Ingredients:

80 grams quinoa

100 grams of dry lentils

1 clove of garlic

1 bay leaf

half zucchini

1 carrot

1 tomato

2 spoons black olives without pits

half onion cut finely

salt

extra virgin olive oil

a sprinkle of love

Method:

Rinse your quinoa and put it in a pan with water. Let it cook for 20/25 minutes (read the instruction on the back of your quinoa package). When is done let it cool down.

In a separate pan with water, garlic and bay leaf boil your lentils.

With dry lentils sit in water overnight then boil for just 5-7 minutes.

In a bowl put your diced tomatoes, your shredded zucchini and shredded carrot, your olives cut in quarters and the onion cut in a very small pieces.

When the quinoa and the lentils are cooked and cooled down put them with the veggies in the bowl and dress them with extra virgin olive oil, salt and pepper.

Put your salad in the fridge until is time to serve.

Bruschetta

One of the thing that I really miss from Italy its the aperitivo time/happy hour..ohhh how  I miss la dolce vita…..After 5 o’clock you get together with your friends or lover and you go to the bar for a nice  drink and bite to eat before dinner….a must in almost every bar is bruschetta a piece of bread grilled topped with tomatoes and oil ,we call that pane e pomodoro..so good my favorite appetizer so easy to make with few simple ingredients let go see how to do it.

Ingridients:

  • 10 cherry tomatoes
  •  4 basil leaves,
  • 4 slices of bread
  • 1 garlic clove,
  • oil evo,
  • salt to taste
  • a sprinkle of love

Method:

  • Cut your bread and toast the both sides in a griller or on a frying pan.
  • Once golden brown,take each slice and scrub it with a clove of garlic.
  • Now cut the tomatoes in small cubes or if you use cherry tomatoes cut them in half and them cut them in half again so from 1 tomatoes you will try to have 8 small pieces.
  • Pour the tomatoes in a bowl put the oil,salt basil and mix for a little bit.
  • Take your bread put it in a nice serving plate and put the tomatoes and oil mixture…voila..you can also add some mozzarella cubes if you like or olive ..I did it simple ..enjoy it with a nice glass of prosecco and have some dolce vita at your house

Avocado cherry tomatoes and tuna salad

I have a lot of Mexican friends and they always talked about avocado that I never tried in my life because growing up in   Italy I never had the opportunityImage

So one day I bought the avocado and made this lovely salad that right now became our favorite 

 

Ingredients:

1 avocado

1 can of light tuna

10 cherry tomatoes or 2 tomatoes cut in dice 

half lemon

oil EVO 

salt

a sprinkle of love 

 

Method:

Clean your lovely avocado and cut it in dices,cut the cherry tomato in half,take off the oil from your tuna can and put everything in a bowl.

Mix well and add the juice from the half lemon and put the salad in the fridge for half an hour before you serve it.

when is time to serve it put some salt and a teaspoon of oil EVO
